Crumb Cake...

This is another recipe taken from More With Less. I used what I had on hand and adjusted the spices some and here's what I came up with:

4 cups unbleached flour
2 cups cane sugar
1/2 t salt
1/2 t nutmeg
mix well and cut in;
3/4 cup butter and 1/4 cup rendered beef fat (or other fat/oil or more butter or fruit sauce)

Set aside approx. 2 1/2 cups of crumb mixture to reserve for topping.

Blend into cake mixture:
1 t baking soda
3/4 t cream of tartar
2 beaten eggs
1 3/4 cup buttermilk
Pour into sprayed 9x13.
Add 1 t cinnamon to crumb topping and sprinkle across the top of cake batter.

Bake at 350 approx. 35 minutes.
Yummy served warm!
My cutting wasn't so good here, but you can see how light and fluffy this cake bakes up!
This would double as a good Coffee Cake for Breakfast or Brunch!
