A twist on meatloaf...Chicken Loaf



I didn't use an exact recipe with this, I just made it like I do regular meatloaf; using ground chicken rather than beef and adding just a little more extra fine whole wheat bread crumbs (from the freezer) and about 1/4 to 1/2 t of oregano.
My family loved it! Especially dh, which shocked me because I fully expected a big "where's the beef?" or "what have you done to my food now?" :-)
But it was very good, cooked up in a little less time and as you can see, it stayed moist but didn't fall apart.
Are you up to trying a different meatloaf?
*Served here with steamed broccoli and chickpeas.

Joy,
I fixed some fresh chicken and duck eggs yesterday and took him his plate. He later said that the eggs were so brightly colored that he thought they were squash and kept wondering what on earth I had done to the squash! lolol Then he figured out it was eggs! ;-)

LOL LOL That is so funny! He got to eat ducks and chickens in one meal..GREAT!!! I need to find some ground chicken you know I have NEVER ever bought any and have NEVER ever even had any! :-
I have only bought ground turkey once.

You can find it often at Kroger and you can also grind it yourself, but I haven't done that yet :-)
