Beets...


I could hardly believe my eyes when we went out after storms the other day, and these beets had been beat up out of the ground! Most were the size of small apples. I've grown them before, but the roots never got bigger than a golf ball but their tops were very good. These guys had rough tops but great roots! This was all that I had, but as soon as we pulled all of them, we tilled and planted more- with hopes of some like this in the fall. I hope to get a lot more than this next time too ;-)

I like to make kvass with them or cook them in a little butter and a dash of real cane sugar, mmm!

They don't mind a little frost, either. I harvested mine in January. I loved that the tops grew in the winter, when the swiss chard had slowed down.
