Apricot-molasses Cake-like bars...



Mix, in order:
beaten egg
1/4 cup cane sugar
1/2 cup plain yogurt
1/3 cup molasses
1/4 cup melted butter
1/4 t salt
1/2 t baking soda
1 cup whole wheat flour
1/2 cup unbleached flour
2/3 cup dried, chopped apricots
1 cup quick oats
Spread in greased 9x13. Bake at 350 for 18 to 20 minutes, just until lightly browned and edges pull from the sides of baking dish. Cool completely. Can be glazed with powdered sugar glaze.
Cut into squares once cooled.
*raisins can be subbed for apricots and cinnamon added
*I made these for a picnic but they are very good for breakfast too, since they are not overloaded with sugar. ;-)

YUM..looks great..you have the best recipes...will be trying these for dh since he can't get enough apricots.
