Tutti Fruity Compote...

This is super easy and can be prepared while the meal cooks.

You can mix and match fruit to make it different every day! :-)


1 can frozen (no added sugar) apple juice
1/2 can of water
1 can drained pineapple tidbits
3 peeled and diced apples
3 cups blackberries
Heat, medium low, ten minutes.

Blend in:
3 T cornstarch or arrowroot
Heat until syrup thickens slightly.

Serve in small dishes or cups OR over ice cream, over plain cake, at breakfast, or for dessert.
The compote was a perfect dessert with our Hawaiian Haystacks!

Just what is a hawaiian haystack?..fruit looks great will be trying for sure

This type of haystack uses brown rice as the base, diced chicken made in a gravy (several cups of broth with a little corn starch or arrowroot), then the wild part is the toppings and you can mix them up as you think they'll eat 'em!
-thawed peas,chopped celery,chopped peppers, chopped green onions, tomatoes, slivered almonds, coconut, pineapple tidbits, chow mein noodles, and cheese.

A different low fat meal! ;-)

I froze the remaining liquid with chunks of fruit, of the compote, for 'pops' btw. ...waste not want not!

I think you just helped me figure out what to put on my angel food cake for dessert tonight! It doesn't really go with quesadillas for dinner, but I don't think anyone will mind!
