Clam Chowder...

3 T bacon grease
1 lg onion, chopped
1 small celery stick, chopped
1medium shredded carrot
1 cup water
1/2 t thyme
1/4 t fresh cracked pepper
3 medium potatoes, peeled and diced
4 c milk
1/4 c pl flour
1 cup or 1 can, drained sweet kernel corn
1 t salt
2 cans drained clams (packed in water, not oil etc)

Saute onion, celery, and carrots in bacon grease for approx. 5 minutes.
Add water, thyme, cracked pepper, and potatoes. Cover and simmer for 10 minutes.
Whisk the flour into the milk, breaking all lumps. Add milk, salt, and corn. Heat 5 minutes.
Add the drained clams last. You want to heat them, but not 'cook' them or they will toughen.

Serve with crackers or fresh bread! Top with parsley or crumbled bacon.

Looks great and I LOVE your new look by the way! Sorry we haven't been in touch things have been crazy around here, we lost all but 7 hens to predators and we aren't sure what they even are, our cow is getting sold and the barn is getting built..Ive had so many things happen and been so busy really miss you, and hope to talk to you soon. Pray for us! I have two babies that are very sick right now with 103 temps.

Oh Joy- summer colds are the WORST!
