This looks like a carrot cake and has lots of yummy moisture but there are NO carrots or spices -but there is some yummy pineapple, that you may or may not notice, and there's also bits of chewy coconut here and there along with soft almonds. My family loves this- even though they're not quite sure what they are really eating ;-)
2 cups plain flour
1 3/4 cup sugar
2 t soda
1 cup slivered almonds
1/2 cup coconut
2 eggs
1 20oz can crushed pineapple and juice
Mix well and spread in 9X13. Bake at 350 for approx 40 minutes
Frosting:
8oz cream cheese
1/4 cup butter
2 t vanilla
2 cups powdered sugar
Beat well and spread over hot cake.
