Kefir Spelt Pancakes


2 cups spelt flour
2 cup plain flour
1 T baking powder
1/2 t soda
1/4 cup cane sugar
3 1/2 cups kefir
3 eggs
1/4 cup oil or melted butter
Beat with hand mixer until well blended. Cook on hot greased griddle.
I like to cool these on my baking rack, flash freeze, and store for breakfasts through the week.

Wow, those look delicious...I have never made anything with spelt flour..but like I always say...a first time for everything...and your photo makes them look very delicious.

Spelt is very similar to wheat. Very tasty but slightly heavier than hard white wheat :-)
