Shortbread=butter+lemon=yummy!
This isn't a big batch of cookies, so they don't last long...which is a blessing to those of us who can't stop "at just one"! ;-)
1 1/2 sticks of butter (3/4 cup)
1/2 cup sugar (plus 2 to 3T additional for dipping)
1/2 t vanilla
1 t lemon extract
1/2 t lemon zest
2 cups plain flour
Cream butter with sugar. Add vanilla and lemon extract. Add zest.* Gradually add flour.
Scrape the bowl several times to make sure all butter is incorporated.
Roll out in 1 inch balls. Dip in the extra sugar.
Place on ungreased cookie sheet and flatten.
Bake at 350 approx 15 minutes. Cool on rack.
Makes approx. 2 dozen cookies.
*If you don't have lemon zest, you can use 1/2 t more lemon extract.
If you don't have the extract, but have a lemon, add 2 to 3 t fresh lemon juice and zest.
