Vanilla-Cinnamon Quinoa Pudding

I've read that the secret to good quinoa is really in the rinsing. 
You will need to rinse this grain about 3 times before using it. And no lazy stuff ;-)- 
you gotta work for this grain! 
Dump it in a bowl of water and rub it together between your fingers. Yes, 3 times.

This is the 3rd time below. Can you see the water is still a little cloudy?

1 cup quinoa
3 cups milk
1 1/2 t vanilla*
1 cinnamon stick
1/2 cup cane sugar
2T butter
After cleaning the quinoa, mix all ingredients in a sauce pot. Bring to a simmer, cover and reduce heat if necessary to keep at a low simmer. Cook for 40 minutes until thickened and milk has absorbed.
*I took a vanilla bean out of some steeping vanilla and used it instead this time. Yummy!




My youngest loves this pudding since he's not altogether fond of the texture of regular pudding. 
He likes the chewy 'stuff' in this one ;-)

One of the great benefits of it as well is its GLUTEN FREE!! Woohoo we may be using it lots. However we would have to use almond milk, and honey in place of regular milk and sugar. You think it might still work? I might could use Stevia instead of honey??

Yes, I think it would work fine. Honey would be even better!!!

A little nutmeg in this would be good too:)

Oh this looks so good! I've been looking for more breakfast foods and I think this will be perfect. I'll definitely try adding a vanilla bean-I have some steeping right now too!
