Chicken Casserole

What's in the pot? Several pounds of chicken! I caught fryer breast on sale--of course DH wanted me to fry it all but I said, "If I fry, I get one meal..If I boil, I can get about 4!" ;-)

This is a casserole that I made with batch one:
2 cups of cooked brown rice
1 cup grated cheese
2 cans cream of chicken
1/2 cup milk
1 pkg of frozen chopped broccoli
1 large onion (sauteed)
-and the chicken of course (about 2 to 3 cups shredded)

Mix and place in casserole dish and top with 1 sleeve of round (Ritz style) crackers, crushed
mixed with 1/2 stick melted butter. Bake at 350 until bubbly and top is golden.
Easy-yummy-frugal!



*Served here with Quick-Egg Wheat Rolls and corn.
