Crispy-light Chicken

*as much sliced chicken breasts or tenders as you need

Mix together in processor or blender:
*3/4 cup grape nuts cereal
*1/2 cup self-rising flour
*2 tablespoons dried onions
*2 teaspoons fresh ground black pepper
*2 teaspoons of seasonings of choice (I used a mix of Essence, poultry seasoning, parsley, basil)
*3/4 teaspoon paprika
Whirl until mix resembles fine cornmeal.
Rinse chicken and dip into flour mix.
Bake in lightly sprayed dish for approx. 25 minutes at 400.
