Quick-Baked Yellow Squash


I love squash. It's usually cheap and it stores well in the fridge.
I simply sliced 3 squash, placed them in a dish with about 2 tablespoons of water, covered them in chopped onions and microwaved for 3 to 4 minutes.
I then topped them with 1/2 package of crushed ritz-style crackers that were tossed with about 3 tablespoons of melted butter. Placed them in the oven at the temp that I was already baking at until the top was golden; about 20 minutes.
Easy and yummy!
