Omelet Muffins

Mix 1/4 cup mayo with 1 1/2 teaspoon mustard

4 eggs
3T water
Beat egg and water.

Add in:
1 1/2 t dried basil
3 green onions chopped
3/4 cup diced turkey ham
1/2 cup shredded mozzarella cheese

Cook mixture in non-stick, sprayed pan until done and shiny.

Served on toasted whole wheat English muffins.

(Can be wrapped and frozen and reheated in microwave or for 2o minutes in 350 oven.)
