Kitchen Tip: BROCCOLI STALKS- don't toss 'em

In browsing recipes once, I discovered that you don't have to throw out (fresh)broccoli stalks...you can grate them and use them.

Now that's a little less for your compost but a little more for your belly! A neat trade, don't you think?

Isn't there a point to them that they taste woody?

I've never been a big fan of broccoli stalks, but my daughter loves them. I think they are better if you peel them first to get the tough outer layer off. Grating them for coleslaw is a great idea!

Your slaw looks delish! I agree it's better to use food on your plate tahn in the compost bin. I like to use the stalks in soup,too. Sometimes I cook them and then chop them up in the blender to make a nice creamy sauce for pasta.

Funny...I never thought of grating them or adding them to cole slaw. Thanks.

I almost prefer the stalks to the crown anymore.

I peel them and then slice them in sticks and eat raw. Or dice them and put them in pasta salad or use in stirfry veggies or in with sloppy joe mix.
