I call this 'Wacky' because the topping is different from other bananas cakes that I've made. Easy and well worth a try!
1/2 cup oil
1 cup sugar
2 eggs, beaten
1 t salt
2 1/2 t baking powder
1 t soda
3/4 t cinnamon
1/2 t nutmeg
1 cup plain white flour
3/4 cup whole wheat flour
1/4 cup ground flax (Opt exchange for flour if you like.)
1/4 cup milk
1 T lemon juice
1 1/4 cups mashed banana
Mix oil and sugar. Beat in eggs. Add dry ingredients and milk. Mix and stir in lemon juice and banana. Bake in 9x13 at 350 for about 35 minutes.
1/3 cup butter,melted
1 cup brown sugar
1 cup coconut
2 T milk
Mix and spread over cake. Broil just until brown.
*It will bubble, but you want it in there just until the coconut begins to get toasted.
