Tamale Pie

This dish got thumbs up from every one at my table! That's always good for the cook/mother.

It's easy and frugal.

Brown 1 to 1.5 lbs of ground beef with chopped medium onion and 1/3 cup of chopped green pepper.

Add in;
1 can kernel corn, drained
1/2 cup chopped black olives
1 t chili powder
salt and pepper
1 small can tomato paste
1/4 cup ketchup
Pour into baking dish (9x13).


Top with cornbread.
1 cup cornmeal
3 T flour
pinch of salt
1/4 t baking powder
1/4 cup melted butter
1 egg
enough buttermilk to make into pourable batter approx. 3/4 to 1 cup

Top meat mixture with cornbread batter and bake at 425 for 20 to 25 minutes until golden.
*I served this with a tomato-cucumber salad.
