Oatmeal-Yogurt-Fruity Muffins

These muffins are not only yummy, they're pretty!

I don't know if you can see it in the pic but they are a little ripply and golden.

Pretty, yummy, healthy, and frugal- sure do go good together!


Soak overnight:

1 cup rolled oats

1 cup plain yogurt

The next day, mix in;
1/4 cup softened butter
1 cup unbleached flour
3 T cane sugar
1/8 t salt
1 t baking powder
1/2 t baking soda
1 mashed banana
1 egg
3/4 cup raisins
Mix well. Bake at 400 for approx. 15 to 17 minutes. Makes 12 muffins.
