3 cups whole wheat flour
2 1/2 t baking powder
3/4 t salt
1 1/3 cup pure cane sugar
2 eggs
1/2 to 3/4 cup shredded, chipped, or flaked coconut
3/4 (or more) cup chocolate chips
1/4 cup melted coconut oil or butter
1 1/2 cups milk
Blend well. Bake at 425 until golden Approx. 12 to 15 minutes. Makes 24!
You can freeze the extras or just keep them in an airtight container. We eat muffins for our 'sweet' after a meal, at breakfast, and/or as a snack.
