Cinnamon Raisin Muffins...

3 cups whole wheat flour

1 1/3 cup kefir or yogurt (you may soak)

1 T baking powder

1 1/4 cup cane sugar

1 1/2 T cinnamon

3/4 t salt

2 eggs

1/2 cup raisins

1/3 cup melted coconut oil *

Mix and bake at 375 for 15 minutes.

*Can use butter, but if using coconut oil, add last and stir in gradually.

still haven't gotten my grain mill should be here Monday and I can't wait! Those muffins look good will have to try!

Those muffins look really good. I am always looking for good wheat recipes. My youngest daughter loves anything with cinnamon.

I froze some of them so I could have them if I needed to grab something on the way out the door.
