Stretching Ground Meat....

Greetings!... and here's what's Working For Me Wednesday!


Can you see what's in this raw ground beef?

Yes, there's oats and cooked brown rice. I made a huge meatloaf last week (lasted for 2 meals) with 2lbs ground beef, almost 3 cups cooked brown rice, and 1 1/2 to 2 cups of oats. ....No one noticed the super sneaky stretching tactics!...And I got by with cooking ONCE for TWO meals! Yay me! ;-)

But this will work for patties, casseroles, etc. You can also shred various veggies and tuck them in too!
I also used some gelatin, leftover from rendering fat, to make this onion-paprika gravy that was outstandingly yummy!
I told the kids' "The ketchup's for the top and the gravy is for the bottom!" ...So they didn't ask for MORE ketchup...for the middle!

I do this all the time using cracked wheat (you can see how I do it here, but I've never thought of using rice or oats. Thanks for sharing!

Neat! I have always used oats, crackers or bread crumbs, never thought to use leftover brown rice. It could really equal more "looping" meals!

Ah yes Joy- the "looping"...should have made another note about that, lol.
