Beignets-




1 T yeast
1/3 cup warm water
1 cup milk
1/4 cup butter
41/4 cup plain flour
3 T sugar
1/2 t salt
1 egg
oil for frying
powdered sugar

Warm milk and butter, just until butter melts

.Mix yeast and water. Add sugar and salt. Add about half the flour and your milk and butter mixture. Blend well, then add the egg and remaining flour.Your dough will remain soft and somewhat tacky.

Working with half the dough at a time, roll into large rectangle approx. 1/4 inch thick. Cut into rectangles. (I used a pizza cutter.)

Heat oil until you can drop a piece of bread in it and it fries crispy in about 1 minute. Do not overheat. (You will need about 4 inches of oil.)

Fry pastries one or two at a time for about 2 minutes on each side. Drain on paper towels. (You can actually turn your oven on about 170 and keep an oven-safe dish in it with paper towels and keep all the pastries in there until all are fried.)  Once drained, sprinkle with powdered sugar.

You can also fill them if you like. The kids asked for my doughnut filling next time :) I would consider cream cheese filling too and/or fruit or jam with the powdered sugar.
