Chocolate Covered Cream Filled Cookies...



These have 3 layers so I will type those up in 3 steps.
The first layer is the bottom cookie layer.

Cream together-
5T butter
1/2 cup powdered sugar
and after those are creamed well add
1cup unbleached flour
and 1 T water
This will form a smooth cookie dough.
Spread in parchment or wax paper-lined jelly roll pan.
Bake at 350 for 12 minutes. Let cool.


Second layer is the vanilla cream.
Mix 2 cups of powdered sugar with 1 t vanilla and enough evaporated milk (or milk or water) to form a thick, pasty frosting. (approx. 3 T) Spread over baked cookie bar. Allow to set up for a few minutes. (*Optional- you can add 3/4 t peppermint oil to kick this up! Some of my kids don't like it so I did not add it.)

3rd layer: Melt 1 1/2 cups semi-sweet chocolate chips and spread over the top. Allow chocolate to set up before slicing.

These are very rich!
