Black Bean Buffalo Chili...

My kids love to walk in the kitchen to discover that I'm cooking beans, because Beans=Chili!

But these black beans with ground bison, takes chili to a whole different level!

Here's is a rapidly-becoming family favorite:

1 lb. (soaked) cooked black beans
1 lb. ground bison; browned with 1 large onion, 1 bell pepper
1 T minced garlic
1 can tomatoes and green chilies
1 can tomato sauce (15oz)
-2 t chili powder (or to taste)
-1 t ground cumin (or to taste)
-1/4 t black pepper
-1/2 t sea salt
bay leaf
Simmer for 30 to 45 minutes on low.

*I serve it with crackers or cornbread. Mexican cornbread is very good with it!

(The price of this chili is a around $7, but it makes enough for two meals for my family. Good budget recipe!)

I wondered if you ended up liking the buffalo. I've had it a couple of times and love it. They have it at my Kroger affiliated store and I keep waiting for it to go on sale. At Fred Meyer (another Kroger store on the West Coast) they had a big buffalo event twice a year. I don't know if they'll do that here but I can hope :-)
Have you done your big shopping yet? I intended to on Monday and halfway through my first store my work called with an emergency. I'm trying again tomorrow. Using your tips has made things so much easier for me!

I do like buffalo, very much!
My crew have really fell for this version of chili. It's got a bite little kick to it.

Kroger is where I bought it. Its supposed to be grass fed, hormone free, etc.

I would like to try burgers with it, but I've found this to be the more 'frugal' thing to do with it.

I wish it'd go on sale here, but this isn't quite the 'area' for it I guess.

I haven't went shopping yet, maybe this weekend or next week. I took a few pics last time and hope to get better ones this time. It got dark last time ;-).

I love knowing there's food here! Saves so much time and $$$! :-)
