A black bean + salad, whipped up with some garden veggies


I love to keep canned black beans around for 'salads' like this.
I used;
1 can black beans, rinsed and drained
1 zucchini, diced
1 medium tomato, chopped
1/3 cup chopped purple onions
1 large green onion, chopped
3 T Italian Dressing
3/4 t dill
pinch of ground mustard (I just try to sneak this in since I read of its anti-cancer properties)
1/2 t parsley
Stir and serve!
