Oatmeal Pie

I know- OATMEAL IN A PIE?! Whoever heard of such a thing?!?! But trust me- it's good! In fact- it's way past good! It's yum-o-Delicious!
And it's easy.

2 eggs
1 1/2 cups sugar
3/4 cup coconut
1/2 to 2/3 cup chopped walnuts
1/4 cup water
3/4 cup quick oats
1 stick melted butter
Mix well and pour into 9 inch pie crust, unbaked.

Bake at 350 for approx. 40 minutes until set.
Serve warm or chilled! 
 ******
*Frugal Tip: Make your own crust for the frugal-ist of pies- but I confess, I got some on sale right after Christmas and cheated ;-)

Cranberry Cheesecake


1 pkg graham crackers (9 whole crackers), crushed fine
2 T (cane) sugar
6 T melted butter
Mix well. Press in deep pie plate. Bake 5 minutes at 350.

1 can of whole berry, cranberry sauce
Puree cranberry sauce and allow to drain in mesh strainer. Shake well and press slightly.

2 8 oz pkg cream cheese
1/2 cup sour cream
3 eggs
1/2 cup (cane) sugar
Blend cream cheese with sugar until fluffy. Add remaining ingredients and blend well.

Pour 1/3 cream cheese mixture over lightly baked graham crust. Drop cranberries by spoonfuls over cream cheese. Pull butter knife through cranberries, gently so as not to disturb the crust. Top with remaining cream cheese mixture. Bake at 350 for approx. 30 minutes until edges are set and center is almost set. Cool and refrigerate.

Impossible Pumpkin Pie


1 can evaporated milk
1 can pumpkin
2 1/2 t pumpkin spice
1/4 t cinnamon
1 t vanilla
3/4 cup sugar
1/4 cup brown sugar
2 eggs
1/2 cup Bisquick
3 T melted butter

Butter and flour deep round casserole dish. This makes a little more than a deep 9 inch pie dish so you will want to use something a little deeper. Place all ingredients in mixing bowl. Beat together 1 minute with hand mixer. Pour in prepared baking dish. Bake 50 minutes at 350. Allow to cool before slicing. This will make its own mock crust.

We LOVE this for breakfast too!

Oat Pie Crust...


This is a unique pie crust with a very unique texture.

It's easy to make and the dough is very easy to 'get along with'.

1 cup unbleached flour
1/3 cup quick oats
salt
1/4 cup butter, sliced
Mix flour, oats, and salt. Cut butter into flour mixture until it resembles cornmeal.
Add 4 1/2 T cold water and toss with a fork. Knead up 3 or 4 times with hands.
Roll out onto lightly floured surface into approx. 12 inch circle. Place in pie dish,
trim and crimp crust.

Fill and bake!

Gooey-Pie Cookie Bars...

Warning! These are SO good, once you start eating them, you may not be able to stop.
The bottom is similar to a cookie, the middle like pie, and the top is lightly crisp which equals YUMMY!
Great for special occasions!


Preheat oven to 325.
Lightly spray 9x13 baking dish.

For bottom:
Cream 1 stick of butter with 1 cup brown sugar and 1 t salt.
Gradually add 2 cups unbleached flour.
Pat mixture level, into bottom of baking dish.
Bake for 15 minutes.

For filling:
Beat 4 eggs with 2 cups brown sugar until foamy.
Add 1 1/2 t vanilla,
1t baking powder
1/4 cup unbleached flour
1 cup shredded coconut
1 cup chopped walnuts.

Mix well and spread over baked mixture.
Bake at 350 for 22 to 25 minutes.

Cool. Cut into squares.
(Then you might wanna pass them out quickly so as to not tempt yourself to eat them ALL alone!;)

Pumpkin:

We love Pumpkin Pie- especially Real Pumpkin Pie!

Making your own pumpkin for pies is easy and frugal.
2 years ago, we grew  several in our garden and I had frozen pumpkin throughout that winter.
This year- only one pumpkin! Grr.
To cook pumpkin, slice it in half and scoop out all the seeds.
The seed cans be rinsed, soaked in salt water, and baked until crisp for a great treat!
Lay pumpkin halves, cut side down in a baking pan. Keep just about a 1/4 inch of water in the bottom as pumpkin bakes so it doesn't dry out.
Bake at 350 until it is easily pierced with a fork. Approx. 45 minutes.
Cool and scoop pumpkin out into blender or food processor.
Try to keep mashing it down to puree it, but don't add any water. It should have enough moisture.
Measure out and freeze.
I got about $14 worth of pureed pumpkin from a pumpkin that cost me a little over a $1!
I will use most of it in pies and some in Real Pumpkin Pecan Cakes or Pumpkin Pancakes.

French Coconut Pie 2...

1 1/2 cups sugar
1/4 cup plain flour
3 eggs
1/2 cup milk
1/2 cup melted butter
1/2 t salt
1 1/2 t vanilla
1 1/2 cups shredded coconut

Pour into unbaked pie shell.
Bake at 325 for 1 hour.

REAL Pumpkin, Pumpkin Pie:


I have stored pumpkin in the freezer from the ONE and ONLY pumpkin from our garden. I also bought some very cheap the other day that I will probably cook up and freeze too.

I put about 3/4 cup of water in a baking dish and bake halved, seeded pumpkins (cut side down) for about an hour on 325. I strain as much water from it as possible and scoop it by cups into freezer containers. I thaw it up in warm water when I'm ready to use it.

-2 8 inch prepared pie shells

3 cups of pumpkin
1 cup sugar
1/4 cup brown sugar
2 t cinnamon
1 t allspice
1/2 cloves
1/2 t ginger
1/2 t salt
1 t vanilla
4 eggs
1 can evaporated milk

Mix well and pour into unbaked pie shells.
Bake 15 minutes at 425.
Reduce heat to 350 and bake 40 to 45 minutes.

(We often eat leftover pumpkin pie for breakfast!)

What does Coconut Cream Pie have to do with Kefir Soda?

Kefir Soda and Coconut Cream Pie, interesting huh?

A few days ago, I made these pies (after dh begging for a pie for days, maybe weeks).

Everyone had a small slice as soon as I took them from the oven but come supper time-
the kiddies wanted a second piece! I said, "Ok, I'll make a deal with you! You drink ONE tablespoon of my Lemon-ginger Kefir Soda and you may have pie".

At first, they protested and made all sorts of jokes but THEY CAVED!
Down went the Kefir Soda and yummy went the pie!
Brown 2 pie shells at 400 for approx. 12 minutes.

In a sauce pan, combine:
1c flour
1/2 c sugar
1/2 t salt
6c milk

Mix well and beat in;

6 egg yolks (*keep whites for meringue)

Heat at medium-low heat.
Cook, stirring constantly, until thickened.
Remove from heat and add;
4T butter
2 t vanilla
1c coconut
Spoon into baked pie shells.

To make meringue,
beat the eggs whites until stiff peaks form, beat in 6T sugar.
Top pie filling with meringue, sprinkle about 1 T coconut over each pie, and place in 325 oven for approx. 12 minutes until golden across the top; being careful not to over-brown.
Refrigerate until well-chilled.

And remember to offer kefir soda before serving! ;-)

Quick Whipped Cream Chocolate Cheesecake...

I got a pic of the top of this- as I hadn't sliced it yet upon typing this up, but it was really hard to wait! DH and I went to a discount grocery store a week or so ago and I found some cheap goodies to make this yummy pie with that made for a nice surprise.
The basic recipe was on the lid of the Chocolate Whipped Cream and I couldn't believe how simple it was- and wondered if DH would frown, giving me the "that's not cheesecake" bit.
Well, I snuck him a piece a few minutes ago and he loved it!
Yah!
Here's the simple recipe:
Beat 8 oz of cream cheese with 1/3 cup sugar.
Once fluffy, stir in 1 container of chocolate whipped cream.
Pour into chocolate graham or chocolate cookie crust.
Top with shaved chocolate from semi-sweet baking chocolate- or chocolate chips.
Chill for 3 hours.
See how easy?!
Sweet!
(I got the whipped topping for .50 and the cream cheese for .79.)

Sometimes I cheat. Do you?



I made this Apple Crumb Pie the other day and well, I cheated.
I had a premade pie shell which was my first cheat.
But I also had some pre-peeled and sliced apples hiding in my freezer that I've been saving that I picked up on a deal at the Cash-n-Carry some time back.

Well- its December and there's so much to do and bake- it was time to cheat! ;-)

All I had to do was dump the apples in the pie shell, sprinkle with a little lemon juice, and top with the same topping that I use for fruit crisp. Easy peasy! It baked after lunch and was ready for dessert after supper!

Chocolate Cheesecake is sitting right in front of my milk!

Ever had Buttermilk Pie????

My picture cannot do it justice!

This pie is one of my favorites! And it's so easy to make and frugal!


2-pie shells
Mix:
2 cups cane sugar (you can use white but cane really gives this pie a GREAT flavor)
2 T plain flour
4 eggs
2 sticks melted butter (run mixer while adding)
2 t vanilla
1 cup buttermilk


Pour into pie shell and bake at 325 until set. (Approx. 3o minutes)

Butterscotch (Meringue) Pie....

I whipped up a couple of pies today. (Remember, eggs are .39?) These pies are yummy and frugal! (Especially if you have mastered the art of making your own crust! I confess, I don't often make my own.)
One pie was my old stand-by, Chocolate Meringue Pie! A most excellent pie!
I think I fell in love with this pretty pie when I took a course in Food Service, many many moons ago! I don't think I had ever been exposed to meringue prior to that.Okay, on to the recipe for the Butterscotch Pie! Yummmmmy!
And yes, it really does taste like butterscotch!
1 baked pie shell
1 c brown sugar
4 T cornstarch
1/4 t salt
1 1/2 c milk
3 eggs, separated
1/2 T butter
Mix sugar, cornstarch, and salt in a double boiler*. Add milk slowly. Cook until thick, like pudding. Beat yolks, add to mixture and cook 2 more minutes. Add butter and stir until butter is melted. Turn into pie shell.
To make meringue, beat egg whites until stiff peaks form. Beat in 1 T sugar and a dash of vanilla.
Spread on pie and bake 15 minutes at 300 until peaks are lightly golden.
Cool before slicing.

Chocolate Silk Pie....

(this one is from my little book that came with the Kitchen-aid)
1 9 inch pie shell
1 1/2 cups sugar
3 T cocoa powder
1/2 cup melted butter
3 eggs
2/3 cup evaporated milk
1 t vanilla
Mix ingredients in that order, pour into pie shell and bake approx. 55 minutes.
Easy and yummy!
And if you will notice, it separates into 3 layers which makes it really pretty!

WALNUT MOLASSES PIE...


The original recipe did not call for the nuts and to keep it more frugal, I have made it that way when I didn't have nuts, couldn't spare them, or just needed something frugal, quick, and sweet!
The addition of nuts in this recipe gives it a similar appearance to a pecan pie.
The molasses is very prominent in this recipe, so if you are a lover of molasses and/or cane sugar...this pie is for you!
5 ingredients +nuts+one pie shell =one sweet treat!

Mix:
4 eggs
1/2 cup sugar
1/2 cup molasses
2 T flour (s.r.)
1/2 cup melted butter
*opt 1 to 1 1/2 cups walnuts or pecans, etc
Pour into 9-inch pie shell and bake until set.
(approx 35 minutes)

FRENCH COCONUT PIE....


This is an old, easy, and fairly frugal recipe that's been tucked in my recipe tin for years and years.
I made two different pies and this one won 6 votes out of 8!
5 ingredients + one pie shell! Easy peasy!

Preheat oven to 400.
-unbaked 9 inch pie shell (homemade or storebought)
In preheated oven, bake shell after brushing with egg white for one minute to help keep the crust from becoming soggy.
(You don't have to use a separate egg white, just dab a little from one you will be using.)
In a bowl whisk lightly;
3 eggs .
Blend in 1 1/2 cups sugar
1 t vanilla
1 cup coconut
-and slowly whisk in
1/2 cup melted butter
Pour into pie shell.
Bake at 400 for 10 minutes;
375 for 15 minutes;
350 for 15 to 20 minutes.

Peach (fruit) Cobbler-



This is great for an easy and frugal dessert!
This was made by request tonight with a supper of fried chicken legs!
(Can't hide being in the South can I? ;-)
Preheat oven to 400.
Spray or grease 9x13.
Melt 1 stick of butter and stir in;
1 1/2 cup cane sugar
1 1/2 cup plain flour
2 t baking powder
1 1/4 cup milk
Stir well and pour into pan.
Top with 2 cups sliced peaches, then lightly sprinkle with 1/4 cup cane sugar.
*(May use pie filling, canned fruits, fresh fruits etc for variety.)
Bake approx.35 minutes until top is golden and semi-set.
Easy peasy!

Blueberry Cheesecake...oh my!



Crust:
-1 1/4 cup crushed graham crackers (whirl broken crackers in the blender)

-1/2 stick butter

-2 1/2 T cane sugar


Filling:
-2 8oz pkgs cream cheese

-1/2 cup sour cream

-1/2 c cane sugar

-2 eggs

- 1 T fresh lemon juice

Bake at 350 approx. 25 minutes until set well and lightly browned.
Chill.

**Blueberry Topping:
3 cups fresh or frozen blueberries

-3/4 c cane sugar

-2 T coconut oil

-3T arrowroot

Cook over medium low heat until slightly thickened and blueberries have softened.

Chill and serve over sliced cheesecake.

**
Blueberry Topping would be great over homemade pancakes!

Orange-Pineapple Cheesecake....


8 oz cream cheese
creamed with
2 eggs

Add in;
1/4 c milk
1 t vanilla
1/3 c cane sugar
1 T orange zest
Pour in;
-graham pie shell
Bake at 375 for 25 to 30 minutes.
Cool, chill.
Mix:


1 c yogurt
1/8 c cane sugar
1t vanilla
Pour over cheesecake, chill.

Before serving top with;
1 can of chunk pineapple, drained (or fresh)

**Kid friendly.
