KITCHEN TIP TUESDAY TIP:
Ever put your pita bread in the oven, only to remove a flat frisbee?
Me too!
Ugh!
Well, I've discovered that I've usually added to much flour and my dough is a little too stiff when that happens. Yes, rising time is important and I usually let them rise while the oven is preheating and they are ok- except when my dough is too stiff.
Pita dough should be very light, it should be soft to the lightest touch. Not sticky, but light enough that it would certainly need a little extra (light) dusting of flour to have to roll it out. If your dough can be rolled out without a light dusting of flour and if you are really having to press on your rolling pin- you may also end up with a flat pita!
But don't despair, even if they are flat!
You can often cut them in half and slice them open with a knife, or stuff and fold them like a taco.
With Tammy's (excellent) whole wheat pita recipe, she uses a good dose of gluten, which help keep your dough nice and soft, but if you are using another recipe that doesn't use gluten and uses all wheat, you could also try subbing 1 cup of wheat flour for plain white flour for a little more softness.

Menu..
I will be trying to fix up some healthy "convenience'' foods for my crew this week. We will be taking some nightly walks (and 'picnics') through the old part of 'town' and stopping in on Shakespeare In the Park! This is a free play they are doing throughout the rest of this month. Dh and I would love to sit through the whole thing but the kids...boy do they have a different view!
We caught a few minutes of the show the other night and after being seated for less than 2 minutes, one of my own comedians got up and whispered in my ear "if you'll excuse me, I'm going to go hang myself now".
Funny, kid!
Remember the line in Toy Story from Potato Head about "you uncultured swine"? Well no, I didn't say that BUT I thought about it and how I had taken them to see ALL three of those and I had been a good little mother and sat through all of them, without even ONE complaint- why can't I see ONE Shakespeare In the Park? ;-)

YOU are the best nurse you can have!
Recently, after weeks of feeling bad and having strange things happen to me, I decided to have blood work drawn. It showed some things but they didn't do everything that I wanted, so here's my arm, stick me again!
At my specific request, I discovered that my D and B levels were low. All part of auto-immune problems and are common and to be expected. But- they would not have even looked at those if I had not requested it! They should know this has to be looked after!
Well, what was even more mind boggling to me was that when dumb ole me spoke to the well educated physician about cod liver oil for the D, he said I couldn't get D from it, only E! WHAT!?!?!
I wanted to argue the point but hey- he had his handy dandy computer in front of him and it told him so!
But- don't put it past me to take a bottle in when I go back for the results of my next requested test!

Homemade Chocolate Pudding...
2/3 cup sugar
3 T cornstarch
dash salt
4 cups milk
2 eggs
1/2 t vanilla
5 Ghirardelli dark chocolate squares*
Pour all but 1 cup milk into sauce-pot, heat on low.
To the remaining cup of milk, beat in cornstarch, sugar, dash of salt, and eggs.
Add to saucepan. Continue heating on low-medium heat, whisking. Once mixture
thickens and begins to bubble, heat one more minute. Remove from heat. Add vanilla
and chocolate and stir until chocolate has melted. Serve warm or chill. (* I used 60% cacao
but I prefer darker!)

Real Pumpkin-Pecan Cakes...
-1 cup pumpkin (can use canned but may need to adjust cooking time and liquids)
-1/2 a stick of melted butter
-1/4 t salt
-1 t baking soda
-1 1/2cups unbleached flour
-1/2 t cinnamon
-1 cup cane sugar
-2 beaten eggs
-1/2 cup chopped pecans
Mix wet ingredients, then stir in dry ingredients.
Bake at 375 for approx. 15 minutes.
Topping, optional:
-8oz cream cheese whipped with
-1/4 cup honey (or to taste)
-Spread on cakes, then dip into chopped pecans.

Waited So Long....

Keeping it simple...
I like to keep homemade pita bread around in ziplocs, for a quick snack or meal. They can be stuffed with just about anything! PB&J, tuna or chicken salad, butter and honey, leftover spaghetti or other pasta dish, leftover shredded meats, scrambled eggs and cheese, beans and cheese, beans and rice, taco fixings, sandwich fixings, steamed veggies, cheese and then heated, and just about anything else! ;-)
This time of year gets busy for our house. Home School is starting back up, we go walking several nights a week, and the winter prep for the garden has to be done as well. Keeping meals good and simple Works for Me!


A main meat dish, often prepared earlier in the day, easy sides, or refrigerator rolls (or butter-grilled leftover bread) all help to pull a fairly quick meal together.

Kitchen tip: green onions
My tip is:
Chop up green onions and store them in a airtight containers in the fridge, right after you bring them home.
They last longer this way and they are so convenient to just grab and toss a handful in a dish for a great mild onion flavor and/or a nice touch of color .
(These will be used -in salads, in Mexican dishes, as garnish on casseroles and soups, and maybe even an omelet or frittata!)
These were my last ones in the garden :(

Book It! Free Pizza 4 Homeschool Kids!
These came in the mail this week. There are 24 coupons in all for a free personal pan pizza from Pizza Hut- for kids! I signed them all up HERE, several weeks ago so it may take a little time to get them, unless they are just now mailing them out before their official start date in October?!
I can't believe they gave me so many of them- perhaps they saw my list of six children and thought "she deserves a break today at Pizza Hut"! ;-)
These are great incentives for kids to read more in their spare time.
Mine are already asking; "whatta we gotta do to get 'em?"

Apricot-molasses Cake-like bars...
Mix, in order:
beaten egg
1/4 cup cane sugar
1/2 cup plain yogurt
1/3 cup molasses
1/4 cup melted butter
1/4 t salt
1/2 t baking soda
1 cup whole wheat flour
1/2 cup unbleached flour
2/3 cup dried, chopped apricots
1 cup quick oats
Spread in greased 9x13. Bake at 350 for 18 to 20 minutes, just until lightly browned and edges pull from the sides of baking dish. Cool completely. Can be glazed with powdered sugar glaze.
Cut into squares once cooled.
*raisins can be subbed for apricots and cinnamon added
*I made these for a picnic but they are very good for breakfast too, since they are not overloaded with sugar. ;-)

Tutti Fruity Compote...
You can mix and match fruit to make it different every day! :-)
1 can frozen (no added sugar) apple juice
1/2 can of water
1 can drained pineapple tidbits
3 peeled and diced apples
3 cups blackberries
Heat, medium low, ten minutes.
Heat, medium low, ten minutes.
Blend in:
3 T cornstarch or arrowroot
Heat until syrup thickens slightly.
Serve in small dishes or cups OR over ice cream, over plain cake, at breakfast, or for dessert.
Kitchen Tip.... 2 french toast tips...
SOLUTION:
sprinkle the cinnamon on once they are on the griddle!
Then when you flip them, sprinkle again- nice and even.

Banana Split Yogurt Smoothie...
1 1/2 cups plain yogurt (I used Creamy Top Stonyfield, mmmm)
2 bananas
2 cups frozen cherries
1 1/2 t vanilla
2 cups milk
2/3 cup cane sugar
1 to 2 cups ice
Whirl in blender.
Optional toppings:
chocolate syrup, chopped pecans, dried flaked coconut

Coconut-Pecan Pancakes...
Its important in this recipe, that you mix the ingredients correctly. If you are like me, that'll be tough because I just like to dump everything in and go! ;-)
But with the coconut oil, if you get it to a liquid point and you dump it into cold ingredients, its not going to blend in. It will re-solidify and whatever it touches will be stuck to it- then you may end up biting into a big lump of baking powder and that's YUCKY!
This is a big batch and makes approx. 40 -4inch pancakes.
Mix dry ingredients together:
4 2/3 cup of spelt or whole wheat flour (or a mix)
2 T baking powder
1 t salt
1/4 cup can sugar
1/4 cup can sugar
1/2 cup chopped pecans
1/2 cup flaked or shredded coconut
Beat
4 eggs into
4 cups milk
Stir this into dry mixture.
Drizzle, as you stir
1/4 cup gently melted coconut oil
Cook on a buttered griddle.
***
I cool these on a baker's rack and then spread them on a pan and freeze them.
Then I store them into a container for the kiddies, for a quick and good-for-you breakfast.
They are also a good snack, as is, or with a little peanut butter or jelly.
*Can sub part of the flour for ground flax.

Rendered Chicken Fat?
I removed the skin from some chicken the other day- and I just couldn't resist!
I had to see if it would produce any fat.
It did!
First I put about a 1/4 inch of water in my saucepan, then the skins.
I heated it on low for several minutes and then turned it up to simmer.
You don't have to babysit the pot, but you do need to stir it every few minutes to make sure its not sticking- and the higher your heat, the more chance of sticking.
I simmered it for over an hour.
It produced a pretty yellow oil, which I strained.
Its very tasty and unique as it does not solidify at all at room temp, like lard and beef tallow.
After it cooled overnight, I discovered that it made a layer of gelatin at the bottom of the bowl, underneath the layer of oil. This would be the real deal; gelatin. Not a manufactured product.

Chicken fat is used in most chopped liver/liver pate recipes to cook the liver and onions in.
This would be great to fry any chicken or turkey in, or to use it to start a gravy.
I used this tonight to make this dish. It was very tasty and didn't have a strong chicken taste.....and no one knew it! ;-) Sneaky mom strikes again!
Yeah, real meat fat!
Not some hydrogenated fat from whatever a canola is! ;-)

Paperless Homework!
These handy dandy, dry-erase, pre lined boards are great for homework! Especially writing assignments! (Good for art too- the back is plain, no lines.)
They can often be found this time of year for $2-$3.
Beats paper, and its reusable for years and years!
Oh and- those cute little pears are from a pear tree that we planted last year!
It has several more on it, but not a bunch, but it also has man-eating wasps hovering around it.
Well, maybe not man eating, maybe man-stinging? ;-)

These are Chicken Meatloaf Muffins made like meatloaf except with ground chicken. But NO ONE would guess what else is hiding in them! You wanna try? Ok- go ahead.......give up?
Well, I almost didn't pull this one off because I kept having kitchen visitors and its really hard to be sneaky when they keep coming in the kitchen! But, I bought a tub of chicken livers and ground them up in the mini food processor. 1/4 of the batch went in these- and NO ONE knew! Not even me- well I mean, I couldn't taste it- at all!
The other 3 batches of frozen ground liver are tucked safely in the freezer. When I'm ready to sneak again, I can drop them in lukewarm water and once thawed, dump them in, and no one will ever EVER know....'cept you! So- please keep my secret! ;-)
Homemade White Cake...
2 cups unbleached flour (yeah, you could use plain)
1 T baking powder
1/2 t salt
1 cup sugar
1 1/2 t vanilla
1/3 cup melted butter (slightly cooled)
2 eggs
1 cup plus 3 T milk
Mix as you would a boxed cake; about 30 seconds until blended and 2 minutes on high.
Bake at 350. Bundt-approx.43-45 minutes. 9x13 approx. 30 minutes.
Served here with a drizzle of chocolate syrup and blackberries.

This cake could be made lowfat or fat free with subs.

This cake is good with fruit as it is textured somewhere between spongecake and angel food cake.
Would be great with lemon zest in the cake and a glaze made from lemon juice and powdered sugar.
Could add chocolate chips, or blueberries, etc.

Easy Italian Pasta with Roasted Peppers...
Cook according to box directions, to the lesser time.
Chop 1/4 cup of cherry, pear, or other tomatoes (yellow pears used here) or even drained, canned
1/3 or to taste of your favorite Italian Dressing (homemade or bottled) I use a homemade with flax oil
1 T chopped chives
1/4 cup chopped roasted peppers (bottled or roast your own)
Toss, chill, serve. This makes enough for a side for several meals at our house.
You can also add more veggies; shredded carrots, diced green peppers, chopped green onions, peas, diced zukes, summer squash, chopped cukes, etc. Can also be topped with Parmesan cheese.
A great frugal side when you're in a pinch or need a big side dish for guests or church picnics!

The new fish in town: Swai...
I bought this fish because it was on sale. I brought it home and went digging for recipes and found that it was in the catfish family. Well, I knew dh would love it but I wasn't sure about the rest of us :-)
So- digging I went for recipes and I found one that really was wonderful for this fish!
I did bake it longer than the suggested time as well as broiled it longer, until I got the crispy look.
I will use this in the future with tilapia for sure!
And again, for the record, this type of fish is really pretty tasty and is said to have good Omega 3! (and its cheap!..I mean frugal;-)

"natural candy"...
I put up the recipe for these a few moons ago, but here are some rolled in coconut as well as the sesame seeds, that we've made this week. The basic recipe is in one of Airola's books.
The recipe is easy and simple:
My kids really like it, but soon discovered that you can't eat too much of it! Its just too rich!
1/2-honey
1/2C butter
1 t-vanilla
1/4C -carob powder (or cocoa)
3/4C-milk powder
1/2C-sesame seeds
Cream butter and honey. Blend in vanilla, carob powder, milk powder. Roll into balls and coat in the sesame seeds. Place in the refrigerator.
(NT suggests sprouting seeds before use. I am not sure how that would work, but I hope to try to soak, sprout, dry, and see if I could make it work!)
**There are numerous variations to this recipe: add cinnamon, roll in coconut or crushed graham crackers, add or roll in crushed nuts, add a good quality peanut butter, etc
