MENU PLAN MONDAY...

Last week I skipped menu planning and boy did I have a tough week because of the lack of a plan! So this week- I made sure I got myself in order, just in time for Menu Plan Monday!

SATURDAY:
-oatmeal
-beans, cornbread, fried potatoes, cole slaw, Rapunzel brownies (recipe from the bag)
-chili (from the leftover beans), Double Chocolate Cookies with walnuts

-Dutch's Holy Hamburgers with all the fixin's (this is what my kids call dh's burgers), donuts

Kids have a way...of scaring you to death!

To the side of our house is our driveway that leads in a J-shape around to the back of our house, and into our garage. Right at the curve of the driveway is where the back yard fence runs. Its a chain link fence that encloses our entire back yard. At the part of the fence where the drive way runs is also the garden, so different tools hang there in the fence. Tools like pruning scissors, gloves, and 2 old rusty saws.

Well, my youngest decides while dh and I are checking the fruit trees, that he and one of his older brothers are going to fly up and down the drive way as fast as they can, apparently. Dh says, "you know, its right when a mother takes her eyes off of them, that they will get hurt". We started walking back towards the other side so we could see the driveway clearly and make sure they were being safe.

The moment I got within ten feet of the fence at the driveway, I look up to see the youngest going VERY fast on his bike right towards the fence. And right at one of those old rusty saws.
He had a look of horror on his face and I called out his name as he stared bewildered right at me, and before I could even look down to see that his chain had popped off- BAM- into the fence! He come up off the seat and barely (thank God!!) missed that rusty saw with his face. He hit with his knee, his chest, his cheek, and both hands.

His knuckles were skinned and blue from the hard blow they took, he had almost a knot, quickly bruising right above his knee, a very red cheek, and a red streak across his chest- and an even wilder expression on his face than before he hit!

He didn't even cry! ( I on the other hand was having to fight them back- as adrenaline pulsed through my veins, fast enough to make me have the shakes!)

Later, retelling the story, he almost cried as the feelings of fear, over not having brakes, crept back over him. I checked over all his owies (for the twenty thousandth time, still fearing that he might have broke something) and gave him some pointers in the event that something like that ever happened again. ...But the expression and fear that he wore as he looked to me before crashing, will haunt me in my sleep.

There he was, coming right at me, on the other side of the fence, wanting me to save him, believing that I could and would save him- and there was nothing I could do. (That has to be ONE of the most horrible feelings that a parent can have- helplessness.)

Kids put so much faith in their parents and they REALLY believe that their parents can do anything! -- Oh to have that kind of faith in our Father!....Amazing thing- the faith of a child!

Lemon Glazed Berry Bundt Cake...

This is a moist, kinda heavy, packed with taste- great cake!
Great as a coffee cake!



INGREDIENTS:
1 3/4 cup cane sugar
12 oz cream cheese
zest of 1 large lemon
1 1/2 t vanilla
4 eggs
1 1/2 cups whole wheat flour
1 1/2 cups plain flour
1/2 cup arrowroot
1 t salt
1 baking soda
1 t baking powder
3/4 cup sour cream
1 cup dried mixed berries, chopped

FOR GLAZE:
juice of one large lemon
1 to 1 1/2 cups powdered sugar

Cream the sugar and cream cheese. Blend in; lemon zest and vanilla. Beat in eggs.
In separate bowl combine; flours, arrowroot, baking powder and soda, and salt.
Alternate adding the sour cream and flour mixture to cream cheese-sugar batter. Fold in chopped berries.
Pour into greased bundt pan. Bake approx. 1 hour at 350. Cool. Drizzle on the lemon-glaze.

Could be made with low fat or non fat ingredients!

Could use all plain flour, regular sugar, and cornstarch in the place of arrowroot.

Liver Treats for the puppies...

Petco sells a pound of liver treats for like $6 or $7! Very expensive- for a treat - for a pet!

Well- why not make them?!

In my freezer I have bags of cooked, blended chicken liver that I sometimes sneak in our food. Its simply sauteed chicken livers and onions, blended to a paste in the food processor. Using this liver, here's how I made these treats that my dogs LOVE!

2/3 cup thawed ground, cooked liver
1 T honey
1 T molasses
approx. 1/2 cup whole wheat flour (enough to make into a dough)

Mix all ingredients and knead up into 3 balls by hand. Roll out onto foil lined baking sheet. Cut into bite-sized squares with pizza cutter or sharp knife. Bake (dry) at 200 for 1 to 1.5 hours. Store in air-tight container or in the freezer for longer storage. And these are kid-friendly too- if you have boys like me, who like to taste the dog's treats! ;-)

To make these for a people friendly cracker, you could use melted butter in the place of the honey and molasses and slightly more flour. :-)

Roasted Garlic Almonds...


3 cups of raw or crispy almonds
4 t olive oil
2 t minced garlic
3/4 t sea salt

Toss almonds with oil and minced garlic, place on baking sheet in single layer. Lightly sprinkle with salt. Roast in the oven at 250 for 20 minutes. Remove to paper towel to cool. Yummy snack!

Menu Plan Monday-

Menu Planning can be done in baby steps- or gigantic leaps!
Some plan the night before they cook, looking to see what is on hand or what they can pick up on the way home...and that may work for some homes perfectly.

For me- I have found it easier to shop once a month, usually the first week of the month, as that's when they often run the best sales. Sometimes I will make out a menu ahead of my shopping trip, listing all needed supplies. But what has seemed to work for me lately is making my menus around what I found on sale. I know basically what my family will eat, and thankfully they're not too awful picky! I take a day to print, cut, and sort coupons. I take another day to write out what's on sale and where, and if I have a coupon to add to a sale price, I often will make a note of it so I don't forget. I take two days to shop. I hit about 3 stores each day, gathering sale items and items I know that my family wants here! ;-) Once the shopping is completed, I then use my receipts to keep track of what I bought and plan menus accordingly. I try to make sure I use the most perishable foods first, such as fresh fruits and veggies. Root vegetables last longer so they can wait. I try to make sure I buy plenty of frozen fruits and veggies, even some dried fruits when I can, and those are served during the later part of my menu/shopping cycle. I usually try to set aside part of my shopping $$ for about 2 weeks into the cycle, to go get more fresh items. I also try to keep baking supplies stocked such as, sugars, honey, molasses, flours (plain, self-rising, whole grains such as wheat and I currently have spelt, rye, and kamut), oils and fats, salts, yeast, baking soda and powder, gluten, cocoa, etc. I try to keep a note of what I run out of for the next shopping trip and I buy in bulk when I can. I try to keep simple things on hand that can be used to turn out quick and/or frugal dishes or casseroles, such as tomato sauce, pasta, brown rice, beans, canned salmon, etc. I also try to keep some handy things frozen when I can that can be turned into a meal or at least part of a meal, in a pinch. Right now in my freezer are a few "convenience foods" such as; preservative free packaged lasagna, homemade cookie dough, cooked diced chicken, cooked diced turkey, and even a couple of packs of nitrate-free hot dogs!

Now on to Menu Plan Monday!

SATURDAY:
-kid's choice
-spaghetti with whole grain pasta, peanut butter kamut cookies
-tuna salad on kamut pita bread with lettuce, fresh brocolli and carrots with dip, cookies
Snacks:leftover easy homemade ice cream, apples, salsa and chips

SUNDAY:
-biscuits and gravy
-sausage and Kamut English Muffins, hash browned potatoes, apple slices
-grilled chicken quarters, mashed potatoes, slaw, pineapple
Snacks: liver pate with crackers, 10 grain muffins, apples

MONDAY:
-eggs and Kamut English Muffins
-whole grain cheeseburger macaroni, slaw, green beans, peanut butter kamut cookies
-grilled chicken breasts, potato salad, lima beans, apple salad
Snacks: corn chips and salsa, pita crackers with liver pate, grapes

TUESDAY:
-10 grain muffins and milk
-beef-icelli, brocolli, speckled butter beans, cookies
-salmon patties, mashed potatoes, green peas, cranberry salad
Snacks:Coconut-pumpkin muffins, apple slices

WEDNESDAY:
-soaked oatmeal
-shredded chicken sandwiches, carrot sticks, apple slices
-lasagna, green salad, corn, no-bake cookies
Snacks: homemade wheat and rye crackers with cheese, popcorn

THURSDAY:
-biscuits and sausage gravy, pear preserves
-tuna salad on homemade pita bread, pickles, carrots, leftover cookies
-roast and veggies, cornbread, fried apples
Snacks: salsa and chips, sunflower seeds, dried fruit

FRIDAY:
-kids choice
-tilapia, potato wedges, peas and carrots
-fried chicken legs, slaw, mashed potatoes, sauteed yellow squash from the freezer
Snacks:Chocolate Cherry-berry Muffins, seasoned almonds, cranberry slush

Iced Graham Bites..



3 cups fresh ground whole wheat flour
1 t baking powder
3 T cocoa
1/4 t salt
1/2 cup honey
1/4 cup cane sugar
1/3 cup melted, cooled butter
1 egg, lightly beaten
several teaspoons of water

Mix butter and honey.
Add cocoa, salt, sugar, baking powder, and blend well.
Add in flour and knead into a ball.
Add water by the teaspoons just until you have the dough where it will hold together but not be sticky and tacky.

Roll out dough onto waxed paper. Cut with sharp knife or cookie cutters into desired shapes.
With spatula, lift to baking sheet. Bake at 350 for approx. 12 minutes. Leave on baking sheet for one minute, then remove to baker's rack to cool. Frost.

Icing:
1 stick up butter, creamed well
1 t vanilla
1/4 cup cocoa
3 + cups powdered sugar
milk, approx. 1 to 3 T

Cream butter, vanilla. Add cocoa, then sugar. Add milk a little at a time until fluffy.

Chocolate Covered Creme-filled Donuts...

I know- I know- but- they begged me! And they wanted NO healthy stuff in them! And when a couple of them suggested that I could not do it- well- hmmp! I showed them! ;-)
So- all healthy stuff- out! Plain flour, sugar, and bad oil, here I come!

This recipe is based on my reworkings of several that I found online. This makes a dough, almost like that of a canned biscuit. As you can see below, they look like that too.

Ingredients:
2 1/4 cup milk
4 t yeast
2 eggs
1/2 cup white sugar
1/2 cup oil
2 t salt
6 1/2 to 7 cups plain flour
oil for frying (I used half peanut oil and half cheap vegetable oil.)
Directions:
Heat milk until just slightly above lukewarm, add yeast.
Mix in sugar, oil, salt, eggs, blend well.
Add flour one cup at a time, being careful with the last cup not to add too much.
You want a soft dough, not stiff.
Knead well, about 10 to 15 minutes by hand on lightly floured counter.
Cover and allow to rest on counter for 45 minutes.
Roll dough until it is about 1/2 an inch thick and cut with circle cutter or wide glass.
Place dough on lightly sprayed baking sheets to rise.
Allow to rise 30 to 40 minutes.
Heat oil, testing with a bread cube. Its hot enough to fry when a 1inch cube of bread cooks in about a minute. But be careful not to get the oil too hot or your doughnuts will brown too quickly and be doughy in the middle.
Drop doughnuts in the oil cooking for approx. 45 seconds to 1 minute per side.
Remove with a slotted spoon to paper towels to drain, then place on baking rack to cool.

Creme Filling:
2 sticks of butter
1 cup of regular sugar (for the texture if you like, if not, omit)
1/3 cup milk
2 t vanilla
approx. 5 to 6 cups powdered sugar
Cream butter and vanilla then add half the sugar, then milk, then remaining sugar until a fluffy filling is made.
You will need a tipped pastry bag or something like I have below to fill the doughnuts.
Chocolate Frosting for the top can made exactly as above, adding 1/2 cup cocoa powder and a little more milk.





This is a Wilton Dessert Decorator Plus
sold on Amazon and at Walmart for under $15 usually.
This has came in handy for me this last year, since I have a knack for destroying pastry bags!

Weekend Baking- to make the week a little easier....

I started by baking 2 loaves of banana nut bread. I sliced one and froze the other for later in the week.
I then made breakfast bread. (I call it that because I usually cool it, then slice it, put in ziplocs, and toss in the fridge for toast for breakfast!)
One of the loaves I gave away to a neighbor that gave me a bunch of fabric last week. Not a bad trade at all! ;-) God has been good to me and given me such great neighbors!
I then made a loaf of pumpernickel rye. I love pumpernickel bread but I couldn't find my favorite recipe so this wasn't quite like it like it, but still very good.

I also baked these tasty little treats.
I call them Iced Graham Bites. They are a little different, in that they puff just a little, but they are somewhat hard and crisp- and very yummy!

I made enough to last a few days! We will have to be at the dentist on Tuesday (3 appointments) so I wanted to be sure that I had plenty of baked goodies to go with a couple of quick meals that day so I also baked up some Oatmeal Scotchies.
Mmm- can you almost smell them?

Baking on the weekends really helps me stay on track the whole week!
It gets me off to a good start on the dreaded Mondays and it helps me on those days that don't go like a day supposed to go ;-)...and yes- it keeps things frugal since there's a quick snack on hand.

Snacks: Oatmeal Scotchies, grapes, apples, boiled eggs

TUESDAY:
-kids choice
-lasagna, green salad, banana nut bread
-breakfast casserole from the crockpot, toast or biscuits and preserves
Snacks: dried fruit, crispy almonds, beef jerky

WEDNESDAY:
- turkey bacon and eggs
-fish, potato wedges, slaw, fruit salad
-Dump chicken quarters, potato salad, golden broccoli salad, cherry crisp
Snacks: sliced apples, buttered popcorn, celery sticks and baby carrots and dip

THURSDAY:
-soaked oatmeal, blueberries from the freezer
- salmon loaf, leftover potato salad, marinated vegetables
- roast, potatoes, carrots, celery, mushrooms, cornbread
Snacks: berry slushie, chips and salsa, Chocolate-berry Muffins

FRIDAY:
-Kamut English Muffins, eggs, jelly
-sausage meatloaf, potato wedges, green salad, pineapple
-grilled lemon-pepper chicken breasts, fried potatoes, buttered asparagus, homemade chocolate pudding
Snacks: homemade pickles, pretzels, apples, sunflower seeds

Two Days of shopping= tons of food!

My once-a-month shopping trip went far better than I expected. I had looked at the shopper guides and got a little bummed out about the prices, but, I managed to do pretty good in spite of that. Seems there were lots of good in-store sales and some very handy coupons!!! This month I splurged a little more, on some junky stuff, than I normally do, due to the fact that we'll have to spend more time in the garden in the next few weeks and I had some really good coupons that some how seemed to make it okay! ;-)

Here's some of what I brought in;

Army Cowboy Birthday Cake

Two birthdays with one cake:

One likes cowboys and the other likes army guys and they want to "have their bday on the same day" so this was my solution!
Nothin' fancy- but fun for sure!

Nashville Flood Video...





My dh, my children, and I have walked on many of these streets, sat in some of these buildings and drove on some of these highways and roads. Its unimaginable to see these pics. The Titans Stadium has 4 feet of water and the Gaylord/Opryland Hotel- fancy fancy- has I believe they said, 9 feet of water inside. The Grand Old Opry is flooded.

We live between one and a half and two hours from these places.

The worst story that I've heard out of this storm is about a mother in Mississippi. She heard the tornado coming and threw a mattress over her children and then laid on top of it. She didn't make it, but her children were saved. The love of a mother! May God provide for those precious children that she left behind.

Viewing these- it made me just stare in awe at the power and might of God. I'm thankful for His mercy- and that we didn't see that kind of flooding in our area. The pictures and the reality of them, are just unthinkable!

Freebies in your local community:

Summer is coming and soon there will be "freebies" popping up in many communities.
We found a brochure at our local library that pointed us to "Nature Fest" in our community. There were some activities scheduled at our local park, but the rain drowned out most of those, but there were several really 'fun for kids' kinda classes at our local college. Here's some pics from the "Birds of Prey" class that we got to attend- and all FREE by the way! ;-)




We got to hear about what they ate(boys love this stuff!), how big they can grow to, and how these particular birds came to be in captivity.
(Interesting story about one of the owls- he was only 1/3 his potential size because he had been found by a family who fed him things like hot dogs- hmm - 'magine that!)
We also took a class on snakes, another on caves, my older boys went to one about organic gardening, but the one they enjoyed the most dealt with what the T.W.R.A. really did! (Enforcing hunting and fishing laws, helping rescue after Katrina, rescuing those who got too close to dams and were pulled in, etc)

Menu Plan.....

Its going to be a busy week! I have 2 b-days to celebrate this week as well as getting ready to do my once-a-month shipping! Time to clip coupons, sort through recipes, and take notes! Here's a tentative Menu Plan (for) Monday, but with a crazy week coming up- who knows what could happen!


SATURDAY:
-fried egg, toasted breakfast bread, violet jelly (by request)
-shredded roast from the crock on buns with mayo and cheese, fresh broccoli and dip
-bean burritos, candy
Snacks: grapes, banana pudding

SUNDAY:

-beans, cracklin' cornbread, fried potatoes, corn on the cob (by request!), banana pudding
-oven-fried chicken, mashed potatoes, green peas

-chili from leftover beans, crackers, blueberries and cream
