Some of My Fave Quick and Easy "Go-To" Meals ...

I don't know a mother who doesn't occasionally get herself in a pinch for time around mealtimes. How could we not?   ..Little Jimmy wants to show us how he can make his car go over his homemade ramp (for the 52nd time), and Sister Sally wants to tell you her baby's name and have you rock it for just a ''minute'' (plan on at least ten, at the most 20, and you may have to feed and diaper it too), big brother Billy needs help with his homework (count on having to go over the whole lesson, so as to remind yourself how to do it first- and brain fog will keep you from getting it the first time, so go ahead and read it twice), big sister Becca wants to know if you will listen to the story she just wrote, and not to mention dear ole Dad wants you to "come here for a second" at least 33 more times today!


-sigh- Now that I'm done 'venting' ;-)...on with the food!


Here's some of my fave, ''go-to'', quick-fix, not gonna eat out, cook at home meals:


**Eggs!-  a great 'go to':
-make 'breakfast'
-egg salad sandwiches, pitas, or even wraps (make a double batch of a bread once a week and store in the fridge for these
-taco pitas- ground beef, cheese, and or beans...topped with cheese and any veggies
-frittata- you can bake these done on about 20 minutes (I got a new recipe to put up, will try before the week's end!)...eat with a salad, veggie, or fruit
-boiled eggs and 'snack' type foods, such as carrot sticks, a salad, bread
-eggs and applesauce (with toasted breakfast bread) is much loved here, anytime of day
-deviled eggs with a salad and a fruit
-omelets, with fruit, oatmeal, hashbrowns, and/or toasted breakfast bread
-More with Less has some good egg ideas too!

**Wraps! endless possibilities:
-buy or cook these up and store in fridge and freezer for long term
-beans and cheese, any veggies on or as a side, but not always
-any cheese, leftover meats, any veggies and sometimes fruits
-breakfast burritos (scrambled eggs, with onions, sausage or bacon maybe, peppers, cheese, maybe salsa)
-soft tacos (keep taco seasoned meat in the freezer when you can, in something that will quick thaw)
-sandwich meats and cheeses, maybe veggies on or as a side
-quesadillas, with cheese or whatever is on hand, side opt: refried beans, rice, salad, chili beans, etc
-use romaine lettuce leaves as a wrap or 'boat' and stuff with leftovers  (chicken, cheeses, etc)
-creamy chicken enchiladas

**Pasta-whole grain to be sure!
-homemade Main Dish Macaroni with any quick frozen veggies such as peas and carrots
-simple spaghetti (sauce and noodles- and you could drop in any frozen, pre-cooked beef from the freezer)
-Creamy chicken and pasta dishes (make a white sauce- or blend milk, cream cheese, Parmesan, salt and pepper)
-(cold or hot) pasta salad with any leftover meats; ham, bacon, ground beef, chicken....season Italian, Mexican, etc, serve with some sort of veggie salad or fruit salad

**Home canned soups or tomatoes:
-easy quick meal..other veggies can be added, leftover meats, or frozen cooked meat just dropped in
-soup with fried cornbread, or quick flatbread, or just crackers


**Chicken:
-cook up when you can, whole chickens or skinned fryer breast (it's good to cook up enough for 4 meals, once a month--that way you have about 1 meal a week that chicken could be quickly thawed and used..just be sure to store in a container that can be dropped in hot water for quick thaw, etc)
-we have one local store that sells chicken tenders and popcorn chicken in 10lb boxes, often on sale at $10 or less here lately   ..They are not pre-cooked but can be put straight in the hot oven, along with some quick sliced potato wedges or cheap fries.
-canned chicken is a great help to have on hand, I only buy it when its cheap
-with cooked chicken on hand, you can easily whip up; chicken salad for wraps and sandwiches etc, chicken for a green salad, chicken for pasta dishes, chicken for soup, casseroles, pizza, etc
-remember chicken can be seasoned in every way (Mexi, Italian, lemon pepper, etc)
-make 'dump chicken' for the freezer and you can lightly thaw and toss it in the oven to bake

**Ground beef (or other ground meats):
-can be pre-seasoned and cooked ahead of time, stored in containers for quick thaw (I like things that can be dropped in hot water)...  Corn tortilla tacos, taco salads, etc are made super quick.
-sloppy-joe meat (who says you have to put it on buns?..press in biscuit cups, pita pockets, English Muffins, etc
-my crew loves hamburger soup
-thawed, cooked, ground beef can be an easy topping for quick pizzas (Who says you have to have pepperoni?)   I think pizzas are pretty quick and frugal, and can be made from healthy ingredients. *To speed the rising, sit the bowl in hot water.*
-again, tacos and burritos are pretty quick (you can use corn tortillas in place of taco shells to keep prices down, and you can easily make homemade tortillas and wraps
-flatbreads (chapati) stuffed with just about anything, very filling when made with whole wheat, veggies and meats can be stuffed in them
-my crew loves 'meat patties'..with any ground meat (I often add finely chopped veggies, and bread crumbs etc, as you would a meatloaf...sorta like meatloaf patties, often topped with whatever cheese is on hand  ..These are quick, and all you need to add is a couple of quick veggies from the freezer and/or a salad.

**Beans+:
-cook up in advance, freeze for quick thaw--Beans and cornbread with a side of greens makes a great quick fix meal when you have stored, cooked beans.
-make huge batches of chili and freeze in containers that can be dropped in the crock or oven safe dishes to heat in the oven
-just about any bean can be mashed, seasoned, and used in wraps, with or without meat, with veggies like lettuce, tomato, onions, etc
-bean patties are pretty quick (mix mashed beans with egg, seasonings, and bread crumbs,whole grain flour, or even rice, etc)
-beans can be made into a loaf, like meatloaf

**Fish:
-canned salmon for salmon patties and salmon loaf, with quick salad, or quick cook frozen veggies
-tilapia, these fillets can be baked up in 15 to 20 minutes- they can be quickly seasoned with your favorite seasoning salt before baked on a lightly buttered pan
-precooked frozen shrimp, thaws quick under warm water- toss in salads, pasta dishes, and quick stir-fry
or even make a sandwich spread with them
-canned tuna- tuna salad, tuna and crackers, tuna in homemade mac and cheese etc
-canned clams for quick clam chowder
-baked salmon fillets- if kids won't eat them plain; bake and crumble in a quick cream sauce and serve over pasta

**Turkey hams:
-you can buy these for less than $4 and slice them for quick pan frying for any meal, but goes great with breakfast foods
-dice them and toss them in a stir fry, pasta dish, quesadillas, soups, omelets, frittatas, wraps (with eggs and cheese), or even with some beans or a salad..again, be sure to store in something you can thaw up quick in warm water

Welcome to Menu Plan Monday! Please see my notes at the bottom about "looping" and once-a-month-shopping tips!

BREAKFAST CHOICES: breakfast sandwiches and pumpkin pancakes from the freezer, Basic Vanilla Granola over homemade strawberry yogurt, Fancy Vanilla Granola and milk, bug oats, etc

SATURDAY:
- BBQ chicken legs, salad, chocolates
- beef and shrimp frugal stir fry over brown rice*, granola
snacks: nuts, grapes

SUNDAY:
-snack lunch: boiled eggs, mustard, carrot sticks, cottage cheese veggie dip, grapes (for kids)
later in the day when we had time, I pan fried leftover fish and reheated rice* for me and dh
-scrambled eggs, turkey bacon, brown rice pudding*, sliced oranges
snacks:  nuts, Cinnamon-raisin muffins

MONDAY:
-white beans* and fat back, cornbread, turnip greens, apple crisp (from orchard apples from the freezer)
-Beefaroni, salad, broccoli , fruit salad
snacks: raspberry cream shakes*, natural peanut butter and crackers

TUESDAY:
-leftover white beans*, cornbread, greens, sour gummy worms
-Maple-Dijon chicken legs, sweet potatoes, green salad, canned pineapples w/raisins
snacks: frozen raspberry ice cream pops (leftover cream shakes above)*, popcorn with butter

WEDNESDAY:
- 15bean soup, cornbread muffins, Honey-Wheat chocolate chip muffins
- Italian baked chicken, lima beans, green salad, hot fudge pudding cake (this rocks!even w/ no extra toppings, but you can serve with ice cream or whipped topping)
snacks: bean patties with hot sauce and cheese, cranberry slushie

THURSDAY:
- Lemon pepper salmon, green salad, slaw*, rugelach
-Dump Chicken Thighs, speckled butter beans, layered salad, Lemon Zest Cookies
snacks: cookies, yogurt berry smoothie topped w/granola

FRIDAY:
-Salmon Loaf, slaw*, green salad, Pumpkin Cake Muffins  (from freezer pumpkin)
-Spaghetti and meatballs, french bread*, homemade ice cream
snacks: toasted homemade bread with peanut butter and/or homemade jelly, carrots and dip

*When you see that little mark beside something, it means I'm "looping it".
Looping it, is what I call making enough to have leftovers to use over the next day or two in other meals or snacks.(EX. The brown rice on Saturday was used in 3 meals. French Bread will be made on Friday that will likely be Pizza Bread on Saturday!)
**Notice also, with my once a month shopping that the fresh fruit is running low this last week of the month. But not to despair- this is where the dried fruits and frozen berries will make up for what's not in the fridge! When cranberries went on sale, I bought some for the freezer. Makes great slushies and cranberry sauce. There's also other berries in the freezer, bought in bulk from our Cash-n-Carry, along with apples that I froze when I bought several bushels from the orchard in the fall. In the pantry, there still remains a few home-canned fruits, pears and applesauce, and jellies. -These fill in the gaps when the fresh fruits are gone!

Old Fashioned Fish Fry

The kids begged for this meal, so after church, we had an old-fashioned fish fry!
This time we even had shrimp and hushpuppies.

And baked potato wedges: I dip them in a well beaten egg, season them, and placed them in a lightly greased pan and bake until soft.
I coated the tilapia/fish (and shrimp) in a homemade cornmeal mix and deep fried for 4 minutes!
They are so good!
An easy and fun meal that my whole crew loves!

Salmon I'm-afraid-so

This is the name my kids gave to this dish because they said "I'm afraid of what mom's gonna put in our food next!" ...They actually like this dish very well. Even eating seconds! And it is like Alfredo, sorta. I baked 2 salmon fillet pieces.
Then flaked them apart with a folk.
(You could use canned as well, or chicken, or shrimp...or even tuna!)
Most Frugal Sauce
I made a white sauce;
with several cups of milk, salt, pepper, 1/4 cup butter, a couple of shakes of basil and parsley, 1 cup of Parmesan cheese, and 4 T cornstarch beat into about 2 cups of water, then stirred in and heated until thickened.

Not-So-Frugal Sauce
In 1/4 cup butter saute1 medium onion and 2 cloves minced garlic
Add 16 oz cream cheese and half-cup of evaporated milk, stir until melted.
Stir in: 1 T basil, 3 to 4 turns of cracked peppercorns, 2 1/2 t salt, 3/4 cup Parmesan, 1 1/2 cups of milk, 1 1/2 cups half and half.
Toss in meat, if using.
Stir until thick and remove from heat.
 Pour over cooked angel hair.


(*This usually makes enough for supper one night and lunch for the next day!)

There's more than one way to get them to eat salmon!!!

*snacks: Raisin Bran Muffins, pretzels, popcorn
WEDNESDAY:
-Coconut Brown Rice
-Split Pea Soup, Amish Bread
-Turkey Patties, potatoes, purple hull peas
THURSDAY:
-Bulgar Cereal
-salmon loaf, potatoes, green peas
-Sausage Meatloaf, pasta salad, mixed veggies
*snacks: Blueberry-Blackberry Smoothie, muffins
FRIDAY:
-soaked grits
-Red Beans and Rice, applesauce muffins
-Creamy Chicken Enchiladas, Black beans
*snacks: Donut Muffins, cheese sticks, popcorn
SATURDAY:
-Bug Oats
-Sausage Gravy and Biscuits, Eggs, Blueberry Crisp

- "Family Sandwich"(I made enough dough at lunch to make a giant short loaf of bread.)

Menu planning is well-worth the time invested! If I didn't do this, I'd be standing in the middle of my kitchen, come meal-time, wondering what to cook and listening to everyone tell me how hungry they are!;-)

Fish Eggs...



Oh yes, I have arrived! This is indeed caviar. My kids have had so much fun just chatting about these. Comments like these have been heard; "I thought caviar was like a million dollars!" and "Isn't caviar 'spensive?"

Even funnier to me is the difference in my kids on how they respond to new and unusual foods! The younger three will eat anything! The older three, particularly the oldest two, will question me and really think that I'm one cockadoodledoo shy of cuckoo! They will say things like; "I'm not so sure this is a real food source mom." Or, "No one else in the whole wide world eats this!"
-sigh- They do keep me laughing though!

I came across this jar while quizzing one of the fellows at Kroger in the meat department. He told me that he wasn't sure if they could order 'fish eggs' but he showed me this jar of 'caviar'. Who knew it was on the shelf the whole time?!?! Sure enough, there it was with the canned tuna, salmon, crab, shrimp, etc. The cost? It's six dollars for a tiny little jar- HOWEVER- it will go far serving it like this. It has a strong flavor and is quite salty so I've found that a little goes a lonnnnng way!

These are whole wheat Savoritz crackers, spread with cream cheese (or buttermilk cheese or yogurt cheese), and topped with a dab of fish eggs. (There are more fish eggs on these than my kids prefer but I wanted you to see them real good.

Snacks: apples, grapefruit, Oh My Stars Cookie Bars, nuts

Wednesday:
-kids choice
-leftover Chili, cornbread muffins
-Baked Salmon, shrimp, potatoes, coleslaw
Snacks: Carrot and Fruit Salad, Lemon Oatmeal Bread, apples, nuts

Thursday:
-Coconut Brown Rice Pudding, orange juice
-Hearty beef stew, Baked Apples
- Tarragon Turkey Loaf with Mushroom Sauce, peas and carrots, sauteed zucchini
Snacks:popcorn, apples, pretzel sticks, Peanut Butter Raisin Balls

Friday"
-Homemade Instant Oatmeal (the link will take you to several posts/flavors)
-Pasta Flowers and Red Bean Soup, bread
-Tasty Chicken Fajitas, seasoned brown rice, fruit salad topped with coconut
Snacks:Lowfat Mini Cheesecake, popcorn, homemade pickles

Two Days of shopping= tons of food!

My once-a-month shopping trip went far better than I expected. I had looked at the shopper guides and got a little bummed out about the prices, but, I managed to do pretty good in spite of that. Seems there were lots of good in-store sales and some very handy coupons!!! This month I splurged a little more, on some junky stuff, than I normally do, due to the fact that we'll have to spend more time in the garden in the next few weeks and I had some really good coupons that some how seemed to make it okay! ;-)

Here's some of what I brought in;
30 lbs split fryer chicken breasts
20 lbs chicken legs
40 pounds chicken quarters
several pounds of natural sausage
several pounds of bacon
rib eye loin sliced very thin for several meals of steaks
several pounds of nitrate free hot dogs (on sale at 2/$3)

1 box popcorn shrimp (coupon)
1 bag of fish sticks (coupon)

I also saved $179 at Kroger's between coupons and my Kroger plus card! I also earned coupons worth $11 off my next purchase there. Not to mention that earned me some sweet fuel points- which saves me .10 a gallon on gas!!!

SATURDAY:
-soaked oat groats
-Breakfast Tacos, pineapple
-Shrimp-I'm-Afraid-So, pb-choc balls
snacks: sliced apples,leftover muffins

SUNDAY:
- millet
-grilled chicken thighs, turnips and greens, potato wedges, cookies
-roast, potatoes, carrots, leftover turnips, Crusty White Bread, Spiced Cranberry Syrup
snacks: Gummy Worms, sliced apples

MONDAY:
-Smores Oatmeal
-Fish Patties(with a mix of leftover fish from freezer), lima beans, corn relish
- Meatloaf, chickpeas (freezer), creamed asparagus, mock Tootsie Rolls
snacks: boiled eggs and mustard, canned pineapple

TUESDAY:
- Peach Smoothies, Toasted Breakfast Bread

Menu: with some pics!

Welcome to MENU PLAN MONDAY! The first thing I did to prepare for this week was to make cookies for the cookie jar! Yummy! I used leftover candies from Christmas to decorate them- no one minded ;-)

SATURDAY:
eggs, toast, milk
tilapia, shrimp, potatoes, brussel sprouts in butter, blueberry cheesecake
meatloaf patties with cheese, boiled potatoes with butter, green peas

SUNDAY:
kids choice: grits, peanut butter granola
Beef Stew with cornbread, cookies from the jar

Snacks: fish eggs-cream cheese-crackers, popcorn


MONDAY:
